Hey, neat, the little line about how to make the MSS clamp to the PMTU
worked!

iptables -A FORWARD -p tcp --tcp-flags SYN,RST SYN -j
CPMSS  --clamp-mss-to-pmtu

I feel like it's a hack though and that the real culprit can be fixed.  But
hey, if it's the only solution, I'll keep running it.
