Sounds like a classic hardware problem. What is your NIC? Have you tried
doing memory tests? E.g., memtest (http://www.memtest86.com/)?

Broadcom Corporation NetXtreme BCM5704 Gigabit Ethernet (rev 02)

No memory test performed. Each server is crashing after a certain time acting as a director. It's hard to believe both could have memory problems.

Tg3/broadcom?

Right. I know, many people have complained about it. I'll make sure not to get this brand any more.

As I'm sure you know list is really quiet on LVS problems. I haven't heard
of any servers having big issues from LVS in years and years.

Right. As I wrote, I've been using 1.0.x for years without a single ipvs problem. I trust it, it's an excellent piece of software.

Linux frioul 2.6.5-1.358smp #1 SMP Sat May 8 09:25:36 EDT
What is 2.6.5-1.358smp? Is that a fedora kernel?

Exactly.
