I may not be understanding the problem yet.
your realserver GW is (or should be) set by SERVER_GW. Is it not being
set automatically?

ah. persistence with the VIP covers links all ports. 
What you want can be done with fwmark. My script doesn't do
fwmark. You'll just have to run a few ipvsadm commands by hand
after running the rc.lvs script. The HOWTO should explain 
how to do it.
