Hm, never noticed that before, but it doesn't seem to do what I want.
This is from the ipvsadm manpage on my system:
--timeout
Timeout output. The list command with this option will display the
timeout values (in seconds) for TCP sessions, TCP sessions after
receiving a FIN packet, and UDP packets.
I don't see how to set the timeout using that, it looks like an option
to ipvsadm -L to tell you what they are set to
# ipvsadm -L --timeout
Timeout (tcp tcpfin udp): 900 120 300
Which confirms the testing I'd done. If I can use --timeout to set it I
don't see how.

have you tried the --timeout option in ipvsadm?

I'm sure this has been discussed before, but I searched the list

a link if this is archived somewhere. :)
When I ssh to machines through my LVS-NAT setup, the connection gets
dropped after inactivity periods. I don't get this if when not going
through LVS-NAT. I have the same problem with other applications.
OpenSSH is supposed to have server initiated keepalive packets to
prevent this, but it doesn't work. And not all applications have some
form of keepalive mechanism. I checked the HOWTO and found the link
below, and have read the documentation of the
/proc/sys/net/ipv4/vs/timeout_* variables. The bit in the HOWTO leaves
me thinking I have to recompile my kernel (not ideal), the sysctl
variables don't seem to be what I'm looking for, maybe I'm wrong.

So I guess ultimately what I want is for LVS_NAT to not drop connections
due to inactivity for programs that would not have done so in the
absence of LVS-NAT.
