all the information you need to start figuring this out is in the performance
section of the HOWTO. Even with that, you have a long way to go from here.

You need to know whether the realservers are network or compute bound.
I would start with a small LVS and determine its performance.

you are talking about 50Gbps of backplane bandwidth here connecting to the 
world over T1 lines.
You will need to test a small setup to determine the bandwidth needed.

firewire is a frame oriented protocol designed for video cameras. I have no idea
about it's use on disks
