If it is in the recieved headers then there isn't much you
can do about it. They are added by the mail server
that _receieves_ the email. So the only way you can
control that is to send the mail from the VIP.
I am not sure if your network topology will allow
that. If you have machines in different locations
then probably not.

That said, I am not entirely convinced that you have
much of a security problem. And it might be useful information
for tracking down configuration problems on a specific 
real server. Personally I would be tempted to leave it be.
