With ldirectord - yes all the nodes are dropped out... (as a performance measure) separate bug with this is that they shouldn't drop out if they have a virtual server specified by URL.
I posted a bodge fix a while back to remove the feature...

    I think I remember you from LVS days a long time ago.

The docs don't address your question directly because virtual services are independant. So if vs1 on node1 drops out, but vs[2-5] are still OK on node1, you only need drop node1 from vs1. How you set that up will depend on the health checking package you use.
