you can look at the connections (it's in the HOWTO and man ipvsadm will help).

You don't change the IPs for LVS-DR, the dst_addr is always the VIP. I expect you can capture packets with dst_addr=VIP on the incoming side of the director and the outgoing side of the director and at ethx on the realserver.
